Andrew Akhaphong, MS, RD, LD, is the corporate registered dietitian for Mackenthun's Fine Foods, a grocery retail chain in Minnesota. Andrew started his career in the clinical setting and worked his way into the clinical nutrition manager. After four years of working in clinical, Andrew realized his passion lies in nutrition education and food accessibility due to the lack of resources available to educate persons of the BIPOC community and lower socioeconomic status. By using the entire grocery store as a tool for nutrition education, it allows for greater individualization and realistic interventions to achieve health outcomes. Andrew has been featured in media outlets including Men’s Health, VeryWell Health, Fitbit, and Livestrong.

Andrew received his BS in Family Consumer Science at Minnesota State University Mankato and MS in Health Promotion at the University of Central Arkansas. He also has his Certificate in Culinary Foundations from Escoffier International Culinary Academy.

Best advice you’ve ever been given: Don't be afraid to stray off the beaten path. Sometimes the unconventional things make more sense.

Favorite thing to eat/cook: My favorite thing to cook is homemade tagliatelle pasta with bolognese; my favorite thing to eat is palak paneer.
