Kelsey Rose is a Clinical Assistant Professor in the Department of Nutrition and Food Sciences at the University of Vermont, where she also serves as the dietetic practicum coordinator. Driven by her passion, Kelsey is enthusiastic about facilitating new conversations around health in the field of dietetics by deconstructing norms and traditional ideas of wellness to create a more informed and inclusive educational environment. Her research focuses on the intersection of stigma and health. Specifically, how stereotypes like SWAG (Skinny, White, Affluent, Girl) and general stigmas against eating disorders create health inequities and perpetuates misunderstanding about eating disorders. Kelsey’s work also explores concepts of body diversity and weight bias beliefs. Drawn to behavioral health and the complexities of malnutrition, Kelsey’s clinical interests are focused on the field of eating disorders. She also has a special interest in Adolescent Medicine. Kelsey has a BA in political science from Ohio University and graduated with a Master’s in Public Health from the University of Michigan. In her free time, you can find her likely outside, reading a book, in the company of her dog Abeline.

Lizzy Pope is an Associate Professor and Director of the Dietetics Program at the University of Vermont (UVM) in the department of Nutrition and Food Sciences. Her research interest center on weight-inclusive nutrition education in adolescents and young adults, examinations of diet culture in our society, and the scholarship of teaching and learning. She teaches several courses at UVM including the introductory nutrition course from a weight-inclusive perspective. She received a BA in Psychology from Dartmouth College in 2005, a MS and her Registered Dietitian credential from Columbia University in 2008, and her PhD in 2013 from UVM. Lizzy became a Certified Intuitive Eating Counselor in 2019. Swimming and running are two of Lizzy’s personal passions, as well as reading historical romance novels, watching reality and period TV shows, and listening to gymnastics, Bachelor, and supreme court-related podcasts.

Best advice Lizzy’s ever been given: Lean on your strengths.

Lizzy’s favorite thing to eat/cook: Cereal.
